Cold Storage Supply Chain: A Management For The Perishable Items

These days, more than production and accessibility to food products, it has become indispensable to store these products for further distribution or use.
It has been an medieval practice to store food in a suitable environment to avoid it from getting rotten and wasted. Western countries used to import spices from India as well as Spice-island of Southeast Asia to be used for consumption. Then the concept of storing food at extremely low temperatures arrived, which will prevent the growth of microbes in food leading to its destruction. Cold storage supply chain is one of this kind, they are mainly concerned with food safety. Apart from this, cold chains are also familiar in pharmaceutical industries and some chemical shipments.

A cold chain is a temperature controlled supply chain with associated equipment and logistics that maintain the desired low-temperature range. It is used to preserve and ensure the life of products such as fresh agricultural produce, seafood, drugs etc. In a nutshell, for perishable products that are not durable, it is a kind of preservative technique.

The term food preservation refers to the technique used to prevent food from getting spoilt, including methods such as canning, pickling drying, use of chemical additives etc. The preservation of food involves preventing the growth of bacteria, fungi or other microorganisms. Refrigeration or cold storage of food is a gentle method of food preservation as it has minimal adverse effects on the taste, texture and the nutritional value of food. Refrigeration extends the shelf life by a few days, and the freezing is used on almost all foods, meats, fruits, vegetables etc. The primary objective of cooling and chilling is to reduce the rate of chemical and microbiological changes in food to extend the shelf life of fresh and processed foods and to maintain a specific temperature in a food processor.

These cold storage chains offer various advantages some of which are discussed below:
Ø  It helps preserve food and products for longer time and hence, helps the firms or agricultural producers maintain sufficiency and continuity.
Ø  It also assists in supplying items like vaccines to distant places that need proper care and preservation.
Ø  With these storage chains, one need not bother about producing perishable products.
Ø  Besides, it includes all the activities related to transportation to the market from the farms which offer assurance about the wellbeing of their products.

More production can lead to high profits, and if products are not appropriately preserved, it can lead to wastage and loss. Same help is provided by the Cold storage supply chain, which helps in maintaining a desirable temperature, proper transportation for the products that are vulnerable to damage due to their low durability. Overall, the name only shows its advantage, as it helps in up gradation of product value, provides freshness to the product, and all of these help in retaining the colour, flavour and nutritive value of the product as it helps in maintaining the texture of the product more than other methods of preservation.
